More controlled wine fermentation
Chr. Hansen has developed blended yeast products for
winemaking that provide controlled fermentation with the flavor benefits of
natural fermentation.
“Wild fermentation is potentially great for
adding complexity, but can be a gamble because you can get undesirable
characteristics and stuck fermentations,” says Rodger Pachelbel of
Chr. Hansen distributor GusmerCellulo. “The new concept from Chr. Hansen gives winemakers the best of both worlds —
improved complexity found in successful ‘wild’ fermentations,
and control and reliability of conventionally inoculated
fermentations.”
