Biocatalysts Ltd. offers an enzyme, Tannase 759P, developed to aid the clarification and flavor improvement of tea extracts, especially iced tea products, the company says. Tannase 759P hydrolyzes the tannins in the tea to create an end-product that is bright, flavorful and attractive, according to the company. The enzyme also is suitable in a number of additional applications, such as the stabilization of wine, clarification of beer and fruit juices, and for use in coffee and flavored soft drinks, Biocatalysts says.
