Biocatalysts Ltd. added Promod 782MDP to its Promod range of enzymes, which are used for the modification and hydrolysis of food proteins. Promod 782MDP, in particular, was designed to decrease bitterness and produce superior-tasting whey protein hydrolysates, the company says. A whey protein hydrolysate that is bland and non-bitter is ideal for beverages and powdered mixes because it does not affect the flavor of the end product, it explains. The bland flavor allows it to be added at higher concentrations in the end application without the need for the addition of bitter masking agents, it adds. The enzyme can be used alone or in conjunction with other flavor-enhancing enzymes.
