An independent clinical trial published in the Journal of Clinical Endocrinology and Metabolism found that the consumption of Hi-Maize resistant starch, a product of Ingredion, Westchester, Ill., improves certain aspects of fatty acid metabolism within fat tissue. According to the study, if fatty acids are built up and stored instead of being metabolized, an individual can become insulin-resistant and develop pre-diabetes. Regardless of caloric intake, body weight and exercise, the study found that the consumption of Hi-Maize can decrease insulin resistance, which can help individuals suffering from pre-diabetes.
