The lingering sweet taste; bitter, metallic or licorice-like cooling aftertaste; and off-notes that are common with high-intensity sweeteners can be masked by Purac Fit, Purac America says. In addition to its masking capabilities, Purac Fit regulates pH and acts as an acidifier in beverages. Fruit and sweet flavors (cherry, berry, melon, mango, pear, peach and banana) are enhanced with Purac Fit, while any artificial tastes from high-intensity sweeteners are overcome, the company says.

Purac Fit balances the sweetness and sourness in a beverage with its lingering, mild sour taste that complements high-intensity sweeteners. It also harmonizes with vanilla, caramel, dairy and coffee-flavors. The natural, lactic acid ingredient enhances carbonated and dilutable soft drinks, dairy-based products, juice and juice drinks, ready-to-drink coffee and tea, and sports and energy drinks. For more information, contact Purac America Inc., 111 Barclay Boulevard, Lincolnshire, Ill. 60069; 847/634-6330; purac.com.
